Beef and courgette pittas

Beef and courgette pittas

This is a great way to use up the early courgettes from the female flowers.

Ingredients:

All these ingredients are to be used as you like, if you like and as much as you like

Pitta parcel (or wrap or naan bread, whatever)
wee courgettes chopped in thick half-moon slices
beef (either yesterday's leftover roast or new strips of minute steak or stir-fry beef)
onions, chili, garlic, green leaves of the season (spinach works great)
tomato, grated cheese and whatever else might be in the fridge
salt and pepper

for the sauce
garlic mayo for directly onto the pitta
harissa for stir frying and if you like just a tea spoon of yesterday's gravy if you still have some (works well with the creamy courgettes)


Method:

Stirfry the beef if raw.

Add the onions courgette chili garlic etc, then the harissa - but not too much otherwise you'll drown out the mild courgette flavour, and taste and season if needed.

Add green leaves of the season. spinach and rocket work best. now is the time to add yesterday's leftover beef if that's what you're using.

Grill your pitta or microwave your naan using packet instructions or microwave your wrap fro 20 seconds.
using a spoon, layer a generous lashing of garlic mayo.

Add beef mixture and grated cheese.

Get it down ya. Yum!
